The Daiquiri

History of the “Daiquiri”

There are more than 35 types of Daiquiris, varieties with tropical fruits, syrups, herbs and spices served over ice, straight-up or frozen in the blender. If a guest comes to your bar and asks for a Daiquiri make sure you understand where the roots are of this classic drink. The name of the Daiquiri is pronounced in many ways, a common pronunciation is “Dai-Key-Ree”.

There are different versions of the origin of the Daiquiri. One of them is that the drink was created by Jennings Cox, an American mining engineer who worked in a copper mine on Cuba around 1896. One day Cox met another miner engineer named Paguliuchi who was viewing mines in the area near Santiago. During a meeting about the copper mine, Cox came up with the idea to make a drink with the local products that were available. Cuban rum, limes and sugar. Cox named the drink after a nearby port called Daiquiri.

There is a second story about Cox. Yes, his granddaughter claimed that Cox made this combination when he had American guests and after serving a few drinks his bottle of gin ran out. For the emergency backup Cox had a bottle of rum, but he didn’t want to serve his guests straight rum, so he added lime juice, sugar and ice. These stories are probably not the real foundation of the combination rum, limes and sugar because all these ingredients are extremely common in Cuba and have been known for hundreds of years.

In 1952 , Constante Ribalagua of the bar La Floridita at the corner of Obispo and Monserrate streets in Havana, said that he had squeezed over 80 million limes and claimed to have made over 10 million Daiquiris. La Floridita became known as “La Catedral del Daiquiri” (the temple of the Daiquiri) and Ribalagua as the “Cocktail King”. Classic proportions of the Daiquiri are 8 parts White Label Cuban Rum, 2 parts fresh lime juice and one part rich sugar syrup (2:1).

The “Daiquiri”Recipe

  • 2 oz. Blanco Rum
  • 1 oz. Lime juice
  • ½ oz. Sugar syrup (2:1)

How to make a “Daiquiri”

Step 1: Put all ingredients in a Boston Shaker.
Step 2: Shake all ingredients with cubed ice.
Step 3: Strain all ingredients in a pre-chilled cocktail glass.
Step 4: Garnish the drink with an lime wheel.
