After Bols Business class editions hosted in Dubai, Manchester, St Petersburg, Amsterdam and Moscow in 2015, Copenhagen started off 2016 with the first of five new editions of Bols Business class. More than 120 guests from Sweden, Finland, Denmark and Norway attended the event, which featured a varied line-up of international and local speakers with topics ranging from bar profits, social media, ‘going local’ and bar concepts.  The speakers in Copenhagen were: Jim Meehan (USA), Calum Brannan (UK) Sune Risum-Urth (DK) Hans Bihl (SWE) and Casper Reinders (NL). A selected group of attending guests had the rare opportunity to have a short one-on-one chat with one of the speakers during the meet and greet. 

Sune Risum-Urth: Tomorrow's Bar

Sune Risum-Urth is bar and spirits manager for Aarø & Co, the owners of AOC and No.2. He supplies AOC, a 2 Michelin star restaurant in the heart of Copenhagen with bottled cocktails and a spirit list, and takes care of the Nordic bar concept at No.2, the bistro restaurant on Christianshavn. He also works as an assistant distiller at CPN distillation. Sune published his first book in 2015; Cocktails, a book about using local produce to make cocktails at home. Sune delivered a revealing TED talk; How to educate your brain with alcohol, where he argues that personal aversions and dislikes are often based solely on irrational fears caused by certain memories.

Sune’s talk will cover how to use your local environment to create unique solutions for your guests. Bottling cocktails, fermentation and the relevance of seasons will be discussed as well as some ground rules to prepare your bar to ‘go local’.
